In the past I have never really cared for guacamole. Not sure if it was the colour or the taste that through me off. My mom always loved it, and had me try it a couple of times, but to no avail. Now that I have grown up I have begun to really enjoy guacamole.
Despite the fact that I like guacamole now, I still want to do it my way. Yeah, I’m difficult that way. Not to mention I still like mustard over ketchup any day. 😉
1 cup of Refried beans
½ cup of sliced Karmata Olives
¼ cup of diced Red/Purple Onions
Salt & Pepper to taste
1-2 cloves of finely minced Garlic
½ a cup of Sour Cream
A dash of Paprika
1 teaspoon of Rosemary
1 teaspoon of Parsley
1 teaspoon of Oregano
1 tablespoon of Lemon Juice
½ cup of diced Red Capsicum
1 teaspoon of Ground Cayenne Pepper
Split your avocados down the middle, long ways. Remove seeds and use spoon to scoop out the flesh into a bowl. With a fork (or blender if you like) mash up the avocados until they are smooth.
Peel and dice up your onions.
Slice up your olives (unless you bought them pre-sliced).
Mince your garlic.
Dice your red capsicum.
Now simply add all of your ingredients to the bowl with the avocados. Mix very well and serve.
